Howdy, y’all! How was your Thanksgiving? Or should I say: ThanksLIVING. You know, because of the whole vegan thing? Anyway, my sister and I actually went to Austin, Texas to visit our aunt for Thanksgiving and had a blast trying new and old Austin vegan spots!
Although our aunt is not vegan, she is super adventurous with food (and life) and has always been very supportive of our vegan adventures! Basically, she’s not like other aunts. She’s a ~cool aunt~
The first day we arrived, we were starving from being on the plane, so we went to this cute Vietnamese place called Broth & Basil Pho Noodle Bistro. It’s not 100% vegan, but they do have vegan options marked on the menu with a cute little plant “V” logo. These were the main vegan options they offered: vegan pho, rice with tofu and veggies, and vermicelli noodles with tofu and veggies.
Being HUGE fans of Pho, we decided to go with the vegan pho. We also ordered tofu spring rolls with peanut sauce. The tofu spring rolls are not on the menu, but they do have shrimp spring rolls and you can just ask to substitute the shrimp for tofu. Everything else in the roll is vegan. Why they didn’t just offer a switch in protein on the menu is beyond me, but… here we are. #rude #offermetofu #rubmybodyintofu
Firstly, the vegan spring rolls were BOMB!!!!! I’m literally still dreaming about them to this day. I might just be a total ho for spring rolls, but I was dying over these. They were delicious, tightly wrapped, and the sauce it came with was DIVINE. It was a peanut sauce/hoisin sauce mix and I wanted to bathe in it.
The pho, on the other hand, was eh… the noodles, veggies, and tofu were good (once I mixed them with hoisin sauce), but the taste of the pho broth itself was not great. I probably wouldn’t order it again or recommend y’all to order it. HOWEVER, I would order ten more of those spring rolls and recommend you do the same. Do you think they deliver to LA?
