If you are ever in the Century City mall and need a bite to eat, definitely go to the food court and check out Bibigo. It’s like the Korean version of Chipotle!! You get to pick and choose what you want in your bowl #customized. Not everything is vegan but the rice is (duh), the veggies and tofu are, and so are all of the sauces (according to the employees).
ALSO, you can order a hot stone bowl instead of a regular bowl which is basically a REALLY HOT stone bowl (duh?) but the best part about it is that it continues to cook/crisp up anything you put in it. So if you pick rice, the rice gets all crispy at the bottom and is really really DELICIOUS. It was so good, I went back the next day for more. In Puerto Rican culture, we call crispy rice at the bottom of the pan “pegao” and anybody who has had pegao knows how LITTY it is.
The only thing we wished could be different was that the tofu was pretty plain. But honesty, the crispy rice makes up for EVERYTHING. Like it was bomb. I’m drooling thinking about it.
