Sorry no measurements because i’m cool like that, but here are the ingredients I mixed together to make these pumpkin chocolate chip cookies (low cal/natural/healthy).
- Brown rice flour
- Pumpkin Puree
- Apple Sauce
- Baking powder
- Cinnamon
- Almond milk
- Apple honey
- Stevia sweetened carob chips
- Vanilla extract
I legit just mixed it all together and baked it for 15-20 mins at 350 degrees. The end product was a cake-y pumpkin-y cookie-y type thing that was quite confusing to eat but also very delicious and addicting at the same time. Every time I ate a cookie I was confused. Like my brain couldn’t categorize it. Was it a cookie? A muffin? A cake? But then each time I ate one, I was reaching for another. Well, I guess it’s like what what they say about drugs: It’s weird at first, but then you want more. (Lol nobody ever said that about drugs. I made it up. #ohwell #GoVeganDitchDrugs)
