Yes. I said what I said. Vegan. Peanut Butter. Ramen. Brb gotta wipe the drool off my chin.
No, but in all seriousness, how good does that freaking sound!?!? Well, the good news is: it tastes as delicious as it sounds. So how did we stumble upon this ridiculously amazing recipe? Great question you ask. Well, I’m a hoe for YouTube (as you all should know by now) and was watching one of my favorite travel channels Kara and Nate, when I stumbled upon one of their videos where they make a peanut butter ramen dish in a coverted school bus. The school bus detail is completely irrelevant. I just thought I’d mention it to spice up your read. Regardless, the second I saw this ooey, gooey peanut-buttery goodness, I knew I had to make it.
Below is our (mine, my sister, and my friend Rebecca’s) modified recipe. Disclaimer, we are not chefs, so if you have a better way to do this, by all means, the world is your (vegan) osyter.
Incredients:
- Garlic
- Cilantro
- Vegan ramen noodles (thicker noodles are better)
- Ramen flavoring packets
- Ginger
- Green onions
- Crunchy peanut butter
- Olive oil
- Water
- Lime Juice
Intructions:
So first, you chop up the garlic and ginger and sautee them in a pot with olive oil. On the side, cook your ramen noodles according to the instructions on the package. Once the garlic and ginger is fragrent and a bit translucent, add in the ramen noodles and flavoring packets. Then add in the crunchy peanut butter (as much as you desire) and stir it all up! You may have to add water to the pot to thin out the peanut butter as you go, but make sure not too add too much. Before you take it all out of the pot, squeeze some lime juice over it!
When it’s all flavored perfectly (you can add salt, pepper, sesame seeds, sesame oil, whatever you want), take the pot off the heat and put the ramen in a bowl. Then chop up some green onions and cilantro for garnish on top. Add extra lime juice if you’re feeling a lil zesty!
