Okay, I know olive oil cakes have been around forever but I only recently heard about them all thanks to the Kardashians Instastories. Suffice to say, olive oil cakes are the BOMB. They are light, fluffy, not too sweet, and so delicious. Eating an olive oil cake is like a breath of fresh air. It’s hard to find vegan olive oil cake (although The Moody Vegan in LA sells them and so does Chaumont Vegan), but when you’re stuck in CT for winter break, you must resort to making your own! And this recipe I found from My Darling Vegan link HERE is SOOOOO easy. My grandma had every ingredient in her pantry and trust me, she’s not vegan. It’s the perfect dessert to bake when you’re with non-vegan family members because the ingredients are universal and EVERYBODY will love it I promise. SO please go make this lemon olive oil cake. It’s easy, simple, and most importantly a 10/10. It’s actually one of my favorite things I have ever baked. And my family will certainly agree! We were in AWE of how amazing it came out. Literally SOOOOOOOOOO SCRUMPTIOUS.
