Who else feels like a chubby frat boy on the inside sometimes? Just me? K… cool. Yeah, I was just kidding btw.
No, but in all seriousness, when it comes to nachos, my inner frat boi comes out like “GIMME THOSE LOADED CHIPS, MAN!”
I do have to but out a disclaimer though. I have made “homemade” nachos before, which just included me loading chips with raw chickpeas, Daiya cheese, and BBQ sauce. However, this time, I wanted to try an actual recipe and make all the toppings (queso included) from scratch! So the nachos turned out INCREDIBLE!!!!! My mans and I ate most of them in one sitting. They were flavorful, delicious, and nutritious!
Here are our only tips of you also attempt to make the nachos:
- When we made the sauce, it came out more of a cheese liquid, then thick sauce. So we decided to put it on a saucepan over the stove to steam in, in hopes that some of the steam would remove the liquid from the mixture. That didn’t quite work as fast as we wanted it to, so instead, we added extra cornstarch… without adding extra water. So the cheese ended up thickening TOO much and turned a bit chunky. So lesson learned: if you ever add cornstarch, add equal parts water. It may seem like you’re just making the mixture more liquidy, but it will thicken if you give it some time… and thicken correctly.
- The recipe calls for toasting the chips in the oven (which is optional) and I highly recommend it! Just make sure you don’t burn them because they’re so thin.
- Add salsa. My mans didn’t like salsa, so we didn’t add it, but I think it would have been a nice lil touch! The cherry on top of a nacho sundae!
All in all, they were delicious and I recommend anyone adventurous enough to make their own nachos cheese to try it. Side note, my mans said the nacho cheese tasted like real movie theatre nacho cheese! Score!!
