I guess I’m, like, a baker now??? I mean, isn’t everyone in quarantine officially a baker since they have nothing better to do/be? Well, if you haven’t jumped on that baking bandwagon out of pure boredom yet, please let me know what else you are doing to fill the time because your girl could use some fresh tips.
As you all know, this past Sunday was Easter. Usually, Easter consists of getting together with your family, doing Easter egg hunts, eating chocolates, all that good stuff. But this year, we were all stuck alone in our apartments pondering questions of our existence. But it was a holiday and I hate having holidays pass without doing at least one thing to celebrate it, so I thought I’d do something festive and make a spring-y vegan lemon loaf!

It actually turned out super yummy and my whole apartment smelled like lemon squares in the best way. I, however, definitely fudged the icing. I didn’t have a hand mixer, so I kind of just threw ingredients together, hand-whisked them and wished for the best. It ended up looking solid for the gram, but the consistency was a bit weird. Because baking is a science and because I’m an idiot, I definitely recommend sticking to the recipe.
Otherwise, bone apple tea to me! Because I’m alone in my apartment, I guess I’ll have to finish this entire loaf by myself! Wow, what a dilemma…
