A protein-filled snack that doubles as a dessert? Count me in, bitch!!
As I’ve mentioned in previous posts, because of the pandemic, grocery stores have been running low on a lot of products, especially vegan ones. These days, people are trying to fill their time with cooking and baking, but are looking for recipes with fewer ingredients since they don’t have access to normal ones. Yes, I’m literally referring to the all-purpose flour shortage. First, it was toilet paper when everyone was shitting their pants at the thought of a pandemic. Now it’s white flour because people can’t stop making banana bread. 2020 is wild, man.

All you need are chickpeas, nut butter, apple sauce, chocolate chips, and some type of flour. She recommends coconut flour, but I only had oats, so I blended them up to make oat flour. I also added stevia as a sweetener because the chickpeas made the batter a bit more savory than I liked.
Final verdict: They were good! I wish I would have added more sweetener, maybe even maple syrup, to make them taste more desserty, but I really like them! They’re a little weird because they are literally blondies made with chickpeas, but once you get over that, they’re good! They’re peanut buttery and satiating and great to sprinkle on top of yogurt or eat as a little pre-workout snack. Check out the recipe and check out Charlotte’s page!
