Ok, I don’t know about you, but I’m feeling 22. Kidding, I was gonna say, I don’t know about you, but I’m obsessed with anything and everything sweet and sour…which is why I HAD to make this sweet and sour chickpea veggie stir-fry over rice from Vegan Richa’s website! (Reading that back, that joke was uber lame and I apologize if I wasted your time lol)

Anyway, I made it for dinner for the sis and my friend Mimi and it was so so good! Like I legit could not stop thinking about it on my 8-hour flight to Paris (since I was low-key so hungry on the plane lol).
