So ladies and gents, what do you do when your life is falling to shits? You stuff yourself with delicious food and call it day!
So that’s precisely what I did today. After a boring ass geology class (no matter how many scientists tell you rocks are cool, they aren’t) our friend Sara was nice enough to invite us over to her apartment and make lunch!
Just so you know, Sara is a master grocery shopper (and chef and friend and person. Basically she’s a master jedi) and was the brains behind this “easy and quick vegan taco recipe”.
Ingrediants:
- Tofu
- Sauce for tofu (We used this really good Trader Joes honey mustard . It has honey in it, but you can probs find one w/out honey if you don’t eat honey of course)
- Greens (We used fresh Trader Joes spinach)
- Veggies (We used avocado and cherry tomatoes. We were gonna add snow peas but we ate them all while we were cooking lol #sorrynotsorry)
- Chickpeas
- Seasoning (We used this MAD DELISH bbq seasoning from Ralph’s Sara had…highly recommend)
Basically you just slice and dry the tofu (using paper towels) and coat it in sauce. Place on greased tin foil pan (olive oil, coconut oil, whateva) and put in over for 15/20 mins on 375 degrees. Then you toast the tortillas on a pan w/ oil (or in a toaster oven) until desired crispyness. Then you season the chickpeas with the seasoning and assemble your taco with the rest of the ingredients Voila! You have sucessfully made quick and easy vegan tacos! (Also they were yummy AF… just saying)

Also just to further prove my theory that Sara is a master jedi friend, she went to a Jewish supermarket last week and picked up a bag of Bamba for Bella and I! (For those of you who don’t know/ don’t read our blog regularly/suck/I’m kidding…Bamba is a vegan Israeli equivolent of a cheese puff except covered in peanut butter instead of cheese and amazingggg). And the photo is off scale. The bag is bigger than it looks lol. Thanks Sara!!!!! You da real MVP.
